Everyday dal



If there is one recipe I could eat almost everyday, it is this. Dal is comfort food, if you ask me. Like being wrapped up in a big, warm blanket on a snowy day.


I've made many dal recipes, but this one is my go to. Relatively quick, easy, and absolutely delicious.


Ingredients:

  • big scoop of ghee

  • 1/2 yellow onion, finely chopped

  • 2 cloves of garlic, finely chopped

  • 1 Tbsp fresh ginger, finely chopped

  • 1/2 tsp whole cumin seeds

  • 1/8 tsp ground cardamom

  • 1/2 tsp ground turmeric

  • 1/4 tsp pink Himalayan salt

  • 1/4 tsp ground black pepper

  • 1/2 jalapeno pepper, finely chopped

  • 1 chopped tomato

  • 1 cup split red lentils (masoor dal), rinsed

  • 2 cups vegetable broth

  • 1/3 cups chopped fresh cilantro

To prepare:

Heat ghee in a large pot over medium heat. Add onions and cook until soft, about 5 minutes. Add cumin, cardamom, turmeric, garlic and ginger and cook until fragrant, about 2 minutes. Add lentils, tomatoes, jalapeno, broth, salt and pepper and bring to a boil. Reduce heat to medium low, cover and simmer, stirring often, until lentils are soft, about 15 minutes. Add extra broth or water as needed - I always need more. Add cilantro. Serve over white basmati rice.
